Carole's Stuffed Mexican Pizza (serves 8)

4 Whole colored peppers

Start with nut cheese
2 1/2 cups (dry) combination of sunflower and almond seeds
1.2 cup lemon juice
1/2 cup water

Place all the ingredients into food processor and mix until fine.

Stuffing
The above nut cheese
1/2 cup grated carrots
1/2 cup chopped celery
1/2 cup finely chopped cilantro
1 tbs cumnin
1/2 tbs chipotle powder

Mix all ingredients together in a bowl. Split colored peppers lengthwise and remove seed and veins. Stuff pappers and put on a plate or dish then put in dehydrator fro two hours.



Pizza (serves 2-3)

Crust
1 cup soaked almonds (after soaking will be 1 1/2 cups)
2 tbs olive oil
2 tbs dried basil
1 tsp pressed garlic
1 tsp dried oregano
1 tbs ground flax meal

Place almonds into food processor with S blade, blend until chunky, then add all other ingredients. Blend until partially smooth. Place on dehydrator sheet topped with a teflex sheet. Roll out until approximately 1/8 inch thick. Shape into a round. Put in dehydrator at 105 for 2 hours, then turn crust over onto another sheet and remove the teflex sheet. Continue to dehydrate until fully dry.

Sauce
2 cups dried tomatoes
1 cup water
1 tsp garlic powder
1 tsp onion powder
1 tbs dried basil
1/2 tsp dried oregano
1 tbs agave nectar
l/4 tsp ground fennel

After soaking tomatoes for 30-40 minutes remove the water and save it. Place tomatoes into a Vita-Mix with all other ingredients. Blend to a paste like consistency using the saved water as needed.

Cashew cheese
Make this basic nut cheese and have ready.

Recipe for cheese
2 cups cashews soaked 4-6 hours, drained. Put into Vita-Mix with 1/44 teaspoon probiotic powder and water to cover the nuts,blend until smooth. Ready to use.

Toppings
Sliced sun dried olives(raw), mushrooms, tomatoes, red or yellow bell peppers, sprouts, anything to your liking.



Tacos (makes 3 tacos)

Meat
1 1/2 cups walnuts soaked and dehydrated
1 tbs tamari
1 tsp garlic (fresh only)
1 tsp green onion
1/2 tsp cumin seed powder
1/2 tsp corianerd blend spice
l/4 tsp Mexican blend spice

Place Walnuts into the food processor fitted with the s-blade, break down about 1/2 way, (do not over process) then add all other ingrtedients and prosessor slightly.

Taco Shells
Romaine leaves or "Lydia's Organic's" flat crackers instead of making wraps from dehydrator.

Toppings
Salsa, sprouts, shredded cabbage, nut cheese.
